Chef Bart
Sages is the realization of a lifelong dream for Bart. Born in Zielona Góra, Poland, he moved to the United States with his mother in 1986. At just 14, and without knowing a word of English, Bart landed his first job under the guidance of renowned chef Walter Walcher at Tosoni’s in Bellevue, WA. His strong work ethic quickly stood out, and Walter became both mentor and friend, teaching him everything from the art of fine cuisine to even how to drive. After four formative years, Bart was ready to take the next step.
He went on to work with the Executive Chef at Eques in the Hyatt Regency, Bellevue, while also studying at the Seattle School of Culinary Arts. To gain even more hands-on experience, Bart took a part-time position at Ristorante Paradiso in downtown Kirkland. Before long, he was fluent in English and graduated from culinary school. Recognizing his talent and dedication, Paradiso’s owner promoted him to Executive Chef, leading Bart to leave Eques and commit full-time. Over the next decade, he mastered the many facets of running a thriving restaurant.
With encouragement from his wife, Jerri, Bart was ready to take a leap of faith and open a place of his own. After finding the perfect corner space in downtown Redmond, the couple left their jobs, signed a lease, and brought their dream to life. In January 2001, Sages opened its doors. Loyal guests followed Bart to his new venture, and the restaurant quickly flourished, earning him a reputation as one of the Eastside’s most respected chefs. Now in his early 50s, Bart brings nearly four decades of experience to the kitchen.
Bart’s culinary passions include crafting sauces, homemade soups, and desserts, always with a commitment to using the freshest, highest-quality ingredients. Outside the kitchen, he enjoys cars, exploring new restaurants, investing, and spending time with his family—and Walter, the family’s beloved Frenchie.
